Salmon patties

2 x 400g tins of pink salmon, bones removed
1/2 cup cooked mashed potato
1 egg
1 Tbsp parsley, chopped
1 tsp Worcestershire sauce
1 1/2 Tbsp fish sauce
1 tsp lemon juice
Salt & pepper to taste
Breadcrumbs to coat
Flake salmon, removing bones. Mix in parsley, lemon juice and sauces. Add egg and mashed potato. Refrigerate overnight.
Shape mixture into 8 patties and roll in breadcrumbs to coat. Fry both sides with a small amount of oil and serve with vegetables or salad.
